A classic Pepper Jack cheese, with a touch of Scratch House flair makes this cheese a cornerstone of our menu. The key to this cheese’s unique flavor is Donna Jean’s Fresno Hot Sauce. Fermented for 4 months, the Fresno Chiles are pureed with vinegar, and the seed pulp imparts a fruity, salty, and fully fermented flavor. Sweet red bell peppers and a touch of fresh rosemary finish out the full bodied flavor profile, for a peppery Jack cheese that works equally well on a charcuterie board, in pasta, or melted for a quesadilla.

FERMENTED FRESNO JACK
SMOKED GOUDA


This firm, springy block is aged for 7 days, then given an 8 hour cold smoke with hickory. No liquid smoke or artificial flavors here, jus authentic direct wood smoke. Easy to slice thin for sandwiches, or shred into mac and cheese, and perfectly paired with fruits on a board.

Salty, tangy, slightly funky, hand-crafted in San Diego. Pizza, pasta, or pesto, Scratch House does everything you want Parmesan to do! This hard wedge will stand up to a microplane, grater, or knife, it will melt in a sauce or crisp to a chip in a pan.

PARMESAN

BABY GOAT CHEESE


This young, smooth, 4 week cultured cashew wedge has a light and yogurty tang. Easily crumbled on a salad, spread on crackers, or smeared into a wrap, it brings a bit of acidity and fermented funk for all occasions. When cold it will crumble, and it becomes a creamy spread when left on the board.

Another product of our zero waste mindset, this bee-free Fire Honey is a thick sugar syrup infused with fermented fresno paste, fresh thyme, and star anise. It is sweet and floral with a warmth that builds slowly into heat. It can be used as a wing sauce, a drizzle for popcorn and pizza, to sweeten hot tea, or any other way you can imagine!
